Bourbon's roots go all the way back to the late 1700's and is said to be so named after an area known as “Old Bourbon” in Kentucky. There are a few hard and fast rules for a spirit to be considered bourbon: It must be made in the United States and consist of a mash that is at least 51% corn with the rest of the mash made up of rye, wheat and/or malted barley It also must be distilled to no more than 160 proof, entered into the barrel at 125 proof and bottled at no less than 80 proof. Lastly, it must not contain any flavor additives or artificial coloring and must be aged in new, charred oak barrels which is what gives the spirit its beautiful amber color.

Every barrel ages a little differently. Usually a barrel will have one great characteristic but needs additional characteristics from other barrels to create the perfect bourbon. Once in a while, a special barrel will have the nose, taste, mouthfeel and complexity we look for. Those barrels are bottled alone as a single expression of what oak and grains can provide the world
